• A coffee that connects to the heart of Derbyshire.
Perfect For:
• A quiet morning, with pastry in hand and stories in your cup.
• Serving in local cafés and beyond, a local favourite that feels both grounded and global.
High Peak Seasonal Espresso
Coffee needs time to de-gas after roasting. For espresso, let it rest for a few days before brewing.
• Espresso:
Start with a 1:2 ratio (18 g in → 36 g out) in 25–30 seconds. Adjust the grind to taste. Expect caramel sweetness with a rounded finish.
• Stovetop / Moka Pot:
Fill basket evenly, avoid tamping, and brew gently. Produces a rich, chocolatey cup.
• Filter / Drip:
Aim for a brew ratio of 60g/l with faster brew times for pourover (2-3mins) and a longer brew time for immersion brew methods such as the cafetiere (4 mins). Adjust your grind size to taste.
